We only use Silver Floss sauerkraut, and there’s no better time for sauerkraut than New Year’s Pork and sauerkraut are a New Year's Day tradition in Pennsylvania. To not serve this dish on New Year's is to invite bad luck for the coming year! We serve it with mashed potatoes, bratwurst, and hot dogs. Whether you eat the sauerkraut on top of the potatoes, served side by side, or on the Brats and hot dogs, it's one of our favorite traditions. Silver Floss is crispy with the perfect shred, not too coarse and not too thin! And it has that perfect tang and sour flavor we expect from a great sauerkraut!
