I eat a ketogenic diet and eat lots of cheese. Kerry gold, sargento, any cheese really in moderation. Fat doesn't matter for carbs! Fat is good and healthy. Baby bell cheese and soft cheese are good as well.
I believe cheese (as part of a healthy diet) is very safe for diabetics. Ask your dr if a referral to a dietitian is available. A good rule of thumb is to look for soft, low fat cheeses like mozzarella.
