I like the simple ingredients idea. However, I feel like these are lacking. Even a bit of sea salt would go a long way. Also, I’d personally prefer if the cashews were roasted but I do understand the whole minimally processed thing. It just needs a bit of dimension but it’s not nasty by any means! If you just need a nice clean pick me up then this is good.

I absolutely LOVE Larabar products! I've been buying and enjoying them for decades. It's so refreshing to find a snack that doesn't have a whole lot of awful ingredients. Larabars usually have two or three ingredients and they are absolutely delicious. This Cashew Cookie Larabar has only dates and cashews. It doesn't really taste like a cashew cookie per se, but it is delicious and satisfying and I don't feel guilty eating them. They're always soft and fresh with their foil wrappers. We like to take them on trips and they're perfect to take with us on hikes.

As a college student running from class to class with workouts in between, I often need a convenient source of quick-digesting carbs to eat on the go. Larabars are a great option - they're portable, tasty, and come in a variety of fun flavors, ranging from rich and decadent (Chocolate Chip Cookie Dough or Peanut Butter Chocolate Chip come top of mind) to fruity and refreshing (e.g Lemon Bar and Apple Pie). These Cashew Cookie bars are only two ingredients: cashew and dates, and each bar is Vegan, Gluten Free, Dairy Free, Kosher, and Non-GMO! As for the flavor of this one, it's solid if not stellar: you can taste the rich cashews and sweet dates in the bar, but I do wish there was more of a crunchy aspect. At 45 grams and 220 calories, these definitely aren't "low-calorie" for the volume (I believe this is the one of the highest calorie Larabars), but a good portion of the calorie content comes from the dates, which are a nutrient-dense food, as well as healthy fats from the cashews. I have yet to try a bad Larabar - some flavors are better at replicating desserts than others, but with very little (if any) added sugars, natural ingredients, and a fairly good price (you can generally get them at around $1-1.50 a bar depending on where you buy them and if you buy them in bulk - a 16-pack of these is on sale for $13 on Amazon right now, but I think it's usually around $16), I think this is a great bar (especially if you like cashews), but I would personally choose some other flavors over this one!
