I'm still adjusting to using a bread machine--a necessity while an injured elbow heals (hand kneading is a no). The HB machine seems complicated but is simpler than it looks and takes all the work out of bread making. The machine did everything except measure and add ingredients, and the bread itself came out done (no doughy middle), soft, and had a bit of a chew to it. The instruction booklet even has a few recipes to try, which is a good place to start for beginners. My only complaints are that the paddle gets stuck in the bottom of the bread and the shape of the loaf (it's short and really tall, which makes it harder to cut than a standard loaf). I suspect once my arm heals, I'll go back to hand making my simpler loaves, shaped loaves, and non-loaf breads and just use the machine for denser loaves or breads I struggle to get right. And it'll be useful when I have a lot if baking to do that includes breads. I do like the machine and how easy it makes things, I just like getting my hands into it more. 😉
