Doesn't it just drain the moisture and flavor out of everything and make the food taste dry as a result?

It can if you leave it too long. I always marinate my meat ahead and as long as you take it off at the right time you have plenty of flavor and moisture. You want to be sure to remove the meat and let it sit before cutting in to it. It is still hot and cooking upon removal, which people tend to forget, so they cook it too long and the meat dries out more.

I love my grill nothing I cook ever comes out dry as long as you make sure not to over cook it

If you boil the chicken before hand or marinate it, it doesn't dry out! Everything I've cooked on it comes out great and no it doesn't season the food for you, so you have to add your own flavor if you think it makes food tasteless.

It can dry some meats out (ie: chicken) but for burgers or hotdogs, etc. it keeps the flavor and doesn't dry it out.
