The Chef’s Choice three stage electric knife sharpener is a kitchen essential that brings dull knives back to life. I can’t find a SKU for the ours (120), but the Diamond Ultra Hone electric knife sharpener with three stages is the closest available today, so posting it here. While cleaning the kitchen I found some 25-year-old Sabatier steak knives that had gone very dull. I tested the electric knife sharpener on them. The coarse stage reshaped the edges, the fine stage refined them, and the polishing stage left the knives razor sharp. I removed the serrated side and sharpened the flat side, turning knives I was about to toss into perfectly smooth, sharp tools - even slicing a day-old baguette. Overall, I’m extremely pleased by the performance of our electric knife sharpener. It is easy to use, guides knives at the correct 20 degree angle, and fits neatly on the counter. We also use this sharpening system on our everyday full tang chef’s knives, and it continues to deliver professional, reliable results.
