I've been trying to incorporate Agave nectar into my cooking more but I'm confused about substituting it for granulated sugar...is it an equal substitution?

You should actually avoid agave all together. It is highly processed and even though it is organic, it is not good for your body. You are better off using local honey or organic REAL maple syrup as sugar substitutes. You can also use organic, fair trade molasses as a sugar substitute. I use all of the above and nobody notices a difference in any of my baked goods. You can find a chart online simply by searching for sugar substitution ratios. This will outline what you can use instead of sugar and how much.
