The Campanini family, now in its third generation, supplies some of the best restaurants in northern Italy with its naturally-grown rice from Veneto and Lombardia. Custom-milled and produced in small lots, traditional varieties of rice produced by Campanini absorb liquid and flavor while maintaining a firm texture and pure flavor. Referred to in northern Italy as the caviar of rice, Carnaroli is the highest quality of superfino, superfine rice. Great for risotto but I love using these in simple soups like with chicken broth and escarole. My kids love them plain with butter. They cook quick and are comforting.

I like the "carnaroli" type to (even if i prefer the "vialone nano" - red box for risotto) the quality of this one is very good as well and i always make sure I have both variatoins..!
