I have a weird aversion to eggs so I really don’t like even cooking with them. I use Bob’s Egg Replacer quite a bit for baking and I think it works great. My baked goods always come out nice and fluffy and not dry, and I don’t notice any different taste them when I use eggs. This is very easy to use - one egg equals 1 tablespoon of egg replacer : 2 Tablespoons of water and you just premix that and let it sit for a minute before adding it to your baking. I do find that if you let it sit too long it will get too thick and gummy but you can just add a bit more water to get it to the consistency of a cracked egg.
This works really well in baking recipes, such as for cookies, muffins, etc. If the recipe only calls for 1-2 eggs you really can't notice the difference.
