In 1918 Benedetto Cavalieri planned and inaugurated this factory with the clear intent of producing choice pasta. Our family tradition continues and, with pride, we present our pasta still manufactured today in the same factory, suitably equipped to maintain the same original method which they call Delicate (long kneading and pressing, slow drawing, drying at a low temperature). This guarantees the complete preservation of the precious biological and nutritional values of the durum wheat (carbohydrates, vegetable proteins basis of the Mediterranean Diet), and gives it its typical taste and its completely natural consistency.
