Zucchini Noodles with Avocado Pesto
This is a quick and healthy recipe that is vegan, vegetarian, and paleo-friendly!
1 ripe avocado
1 cup of fresh basil
3 Tbsp of lemon juice
1 Tbsp of olive oil
2 garlic cloves
1/2 tsp of salt and pepper
4 medium zucchinis
1/2 cup of cherry tomatoes
1. Make zucchini noodles using a spiralizer or mandolin if you have one (the thinnest blade). If you don't have either, use a vegetable peeler and peel the zucchinis lengthways until you reach the core.
2. In a food processor or blender, mix together the avocado, basil, lemon juice, olive oil, garlic, salt, pepper and a Tbsp of water.
3. Sauté the zucchini noodles in a saucepan with a splash of olive oil until tender (not mushy).
4. Mix the avocado sauce with the noodles and top with sliced tomatoes. Enjoy!
