Treat Yourself: Oatmeal Chocolate Chip Cookies
My mother-in-law makes the best cookies. It doesn't matter what kind she makes -- they always come out perfectly. She's a teacher in a small town and everyone at school and her church know her as "The Cookie Queen" because she's always making and giving people cookies. My absolute favorite kind of cookies that she makes are her oatmeal chocolate chip cookies. They are the perfect balance of crunchy and chewy. I made some today and they are the perfect way to warm up a cool fall day.
Oatmeal Chocolate Chip cookies
1 c. sugar
1 c. brown sugar
1 tsp. vanilla
1/2 c. butter, softened
1/2 c. shortening
2 c. flour
2 c. oats
1 tsp. salt
1 tsp. baking soda
1 c. chocolate chips
Cream together sugars, eggs, vanilla, butter and shortening then add flour, oats, salt, baking soda and chocolate chips.
Mix to combine then scoop onto prepared baking sheet.
Bake at 350 degrees Fahrenheit for 12-14 minutes. Let cool and enjoy!
I halved the recipe this time and they came out perfectly. I may have also added some extra chocolate chips ;) You can never have enough chocolate right?
