Ginger Snap Overnight Oats

I recently discovered overnight oats and I’ve been playing around with making them with different ingredients.  I just love the creaminess that the oats get after soaking all night.  I made a pumpkin version, with pumpkin puree, maple syrup and pumpkin spice that was delicious. This time I captured the flavor of real ginger snap cookies by using ginger and molasses and came up with this creamy, sweet breakfast treat that’s reminiscent of a ginger snap cookie.

I love the make-ahead component of this breakfast, which makes it great for a leisurely Sunday morning, but also convenient for hectic weekday mornings.

My Basic Formula

I came up with a basic formula for making overnight oatmeal.  The base is always 1 cup of almond milk and 3/4 cup of old fashioned oats.  You can add any spices, fruit, nuts, sweetener, etc. to this formula and make any kind of overnight oats you want.

Here is my recipe for Ginger Snap Overnight Oats.  This recipe is truly sweet and spicy.  If you would like your breakfast with a little less bite you could cut the ginger in half.

Prep time: 5 mins
Total time: 5 mins

Serves: 1

1 cup unsweetened almond milk
¾ cup old fashioned oats
1 tablespoon brown sugar
1 tablespoon molasses
1 teaspoon ginger
½ teaspoon cinnamon
½ teaspoon vanilla extract
pinch of salt

1. Combine all ingredients in a jar or other container with a lid.
2. Close lid tightly and shake until ingredients are well combined.
3. Refrigerate overnight.
4. Serve cold or heat for 2 minutes in the microwave
