Wait...what's a Cava?

Cava is a Spanish sparkling wine. It's made in the same way as champagne.

What is "brut?"

Brut is a very dry sparkling wine.

Now onto the good stuff...

So many of you have already gone to the store to purchase yours, and we've been drooling reading your reviews! But to kick off the weekend, we wanted to share some simple brunch cocktail recipes that you can add your Campo Viejo Cava Brut wines to!

Rosé has gotten all the clout lately. And for good reason! It's sweet, delicious, and makes you feel like you're sipping sparkling wine on a rooftop bar...even when you're at home watching Netflix. Campo Viejo recommends pairing their Cava Brut Rosé with risottos, pasta, cheese, white meat, fish, and spicy meals, if that's your kinda thing.

Rosé Margarita

A margarita is a brunch staple if you're eating Latin American food! What better way to spice it up with some rosé?

What you'll need:

  • Campo Viejo Cava Brut Rosé
  • Hot water and sugar (to make simple syrup)
  • Lime juice
  • Your fav tequila

In a pitcher, add 1 cup simple syrup, 1 cup lime juice, 1 cup tequila, and 1 bottle rosé. Add ice and stir well.

Watermelon and Blueberry Sparkling Sangria

A simple sangria is sure to wow your home-brunch guests. And you only need 2 more ingredients!

What you'll need:

  • Campo Viejo Cava Brut Rosé
  • Watermelon
  • Blueberries

In a chilled cocktail glass, add 1-2 chunks of frozen watermelon and half a handful of blueberries. Fill the glass halfway with Campo Viejo Cava Brut Rosé.

Very Berry Frozé

Don't get us wrong—the rosé is tasty on its own, but who doesn't love some berries?

What you'll need:

  • Campo Viejo Cava Brut Rosé
  • Hot water and sugar for simple syrup
  • Basil
  • Limes
  • Your best-loved berry

In a saucepan, mix 1 cup of water, 1 cup of sugar, and 1 cup of loosely packed basil leaves and let it boil. Turn off the heat and let the syrup sit for 30 minutes. Strain the homemade sauce and add your freshly-made simple syrup, Campo Viejo Cava Brut Rosé, preferred berries, and ice in a blender!

The Campo Viejo Cava Brut Reserva is a sweet white wine! It's perfect for drinking before your meal to stimulate your appetite or to drink with your meal (we love both options)! If you're eating Mediterranean for brunch or snacking on a charcuterie board, this is for you.

The Brut Reserva Bellini

Consider this our twist on the super simple Bellini.

What you'll need:

  • Campo Viejo Cava Brut Reserva
  • Peach

Peel and put your peaches into a puree. Put the puree, Campo Viejo Cava Brut Reserva, and some ice in a shaker. Serve without ice.

Cava Cranberry Cocktail

Cranberries aren't just for the holidays! All you need is a few of them to make your summer jolly for this recipe.

What you'll need:

  • Campo Viejo Cava Brut Rosé
  • Water
  • Sugar
  • Cranberries

Make your simple syrup and sugared cranberries at the same time by heating water and sugar in a pan until it dissolves. Then, add your cranberries and stir for a bit before straining it—what's left is your simple syrup! You can chill the syrup in the fridge while you make your sugar-coated cranberries. Coat a cookie pan with sugar and roll your cranberries until they're fully coated! Let it dry for an hour. The hours up? Time to put your Campo Viejo Cava Brut Rosé and simple syrup in a flute and garnish it with your sugar-coated cranberries!

Classic Cava Appletini

The martini is a timeless chic cocktail, and making this one is effortless.

What you'll need:

  • Campo Viejo Cava Brut Rosé
  • Apple juice
  • Vodka

You know your limits. Eyeball what you can handle of the vodka and Cava Brut Reserva. Enhance the apple notes of the Campo Viejo Cava Brut Rosé with apple juice.
