Pie Crust (9-inch pan)
1 package of cream cheese
1 package of vanilla pudding mix
1 cup milk
½ teaspoon cinnamon
1 cup Cool Whip topping
¼ cup caramel sauce
Apple cider caramel sauce
1 stick of unsalted butter
3 tablespoons flour
½ cup brown sugar
½ cup sugar
¼ cup apple cider
Make the caramel sauce by melting the butter in a saucepan, then add flour to form a paste. Add both sugars and cider, then stir. Bring to a simmer until the sauce is thick.
Make the filling with a medium-sized mixing bowl. Whip cream cheese until fluffy. Add the pudding mix, milk, and caramel sauce along with cinnamon and whip until smooth. Pour the filling over the crust. Smooth evenly and refrigerate for three hours.
Once set, top with Cool Whip, sprinkle some cinnamon, and a drizzle of the remaining caramel sauce.
