Almond Coconut Overnight Oats

It’s hard to convince yourself to eat breakfast in the morning when there’s just no time to make something good. When you’re busy as ever trying to get out the door, it’s ideal to have breakfast ready to go in the fridge. Guess what? Now you can have just that! Make this delicious overnight oats recipe that will keep you full and focused for a long morning ahead with no morning prep.

Serves: 1    

Prep time: 5 mins

Chill time: at least 5 hours but best overnight


1/3 cup quick oats                                              

1/3 cup unsweetened almond coconut milk (you can also use regular milk or almond milk)

1 tsp stevia

1/2 tsp vanilla extract

Sliced or shaved almonds (for topping) (optional)

Unsweetened coconut (for topping) (optional)

2 tsp chia seeds (optional)

*For a thinner oatmeal use 1/2 cup almond coconut milk

Special Equipment: Mason jar

Place the quick oats, almond coconut milk, stevia, and vanilla into a mason jar. It is important that all of the oats have enough milk to absorb overnight, so don't be shy to add more if you want. Stir it around a little and place it in the fridge for at least 5 hours, but for best results overnight.

After chilling, sprinkle the almonds, coconut, and/or chia seeds on top if you feel like it. And that’s IT! Just head out the door with a spoon to enjoy every last bite.
